Description

Mughlai Biryani Recipe

YOU WILL NEED:

Chicken/Meat 1 kg
Rice 1 kg
Curd 250G
Cashews 15
Almonds 15
coriander ½ bunch
Green chilies 5
Onions 5
Lemon 1
Ginger garlic paste 2 tbsp
Oil 250 ml
water 1.3 liter
ghee 1 tbsp
BOOM MUGHLAI BIRYANI INSTANT SPICE KIT 31G

DIRECTIONS:

1 SOAK:

Wash and soak rice for 30 Mins. Boil 1.3 liters of water with Rice Masala Whole, 2 Tbsp Oil, 1-2 Tbsp Salt, 5 Green Chillis and 1 Lemon. Add soaked rice & cook until 70% cooked. Strain & keep excess water aside.

2 MARINATE:

Take biryani pot, marinate Chicken/Meat with Biryani Gravy Masala, 2 Tbsp ginger & garlic paste and 200g curd for 1 hour.

3 FRY & PASTE:

Meanwhile, deep fry 5 sliced onions in 250 ml oil till golden brown. grind & paste 3/4 fried onions with 15 cashews, 15 almonds and 50g curd.

4: COOK:

ADD 70 ml fried onion oil, 100ml boiled rice water, 1 tbsp ghee and onion paste to marinated chicken; mix well; cook for 25 mins.

5: DUM:

Spread the boiled rice over the cooked Chicken/Meat. Spread 3 tbsp of fried onion oil. garnish fried onions, fresh coriander & mint. Cover & cook on low flame for 20 mins. Mix & serve after 10 mins.

CHEF’S NOTE:

  • Adjust salt and Red Chili as per your taste.
  • To make onions crispy; thin slice and add pinch of salt.
  • Keep Left over oil used for frying onions.
  • Spread saffron milk on top.
